In order not to waste tortillas, people throughout Mexico allow them dry, then fry them to make a delicious, crunchy corn snack. We make our totopos the same way as you would find in the markets of Mexico. We cut and carefully fry our fresh, organic corn tortillas in sunflower oil and then dust them with salt and chile powder.
From the Aztecs to the taquerias of today, corn tortillas have been the foundation of Mexican cuisine and are a part of every meal. Like bread, tortillas are best made and served fresh. So we have dedicated ourselves to making them every day.
Initially made from maize, tortillas began to be mixed from flour with the arrival of the Spanish in Mexico and the subsequent production of wheat. The Sonorans mixed locally-milled White Sonora wheat flour with water, salt and lard – we use organic avocado oil – to produce a soft, pliable dough.
